Potato – Celery – Salad

Ingredients for 4 servings:

  • 600 g potatoes, mainly waxy
  • 250 g celery
  • 1 onion(s), red
  • 100 g olives, stuffed with peppers
  • 150 g natural yogurt
  • 150 g sour cream (possibly half crème fraîche, half sour cream)
  • 3 tbsp vinegar (wine vinegar)
  • 3 tbsp oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the potatoes and boil them in water until tender. Wash, trim, and slice the celery. Finely dice the onions and slice the olives. Peel and slice the potatoes. Place everything in a bowl and mix together. Mix the wine vinegar, oil, and natural yogurt with the sour cream. Season with salt and pepper. Stir the sauce into the potato salad and let it simmer. Season again before serving.
