Ingredients for 2 servings:
- 400 g potatoes
- 10 g oil
- ½ onion(s)
- 1 garlic clove(s)
- 50 g diced ham
- 300 g mixed vegetables (as desired)
- 1 pinch(s) of salt and pepper
- ½ cup(s) broth
- 15 g cheese cubes

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
fabulously crispy fried potatoes, suitable for WW
First, peel the potatoes and dice them. (I then place the diced potatoes in a plastic wrap with 5g of oil and shake the bag until the oil is evenly distributed.) Pour the potatoes onto a baking sheet lined with parchment paper. Bake in an oven preheated to 200°C (top/bottom heat) for about 25 minutes on the middle rack until crispy. While the potatoes are baking, chop everything else into small pieces. (My favorite vegetables are leeks, bell peppers, and zucchini.) Just before the potatoes are done, heat the remaining oil in a nonstick pan with the onion and garlic. Gradually add the remaining ingredients, starting with the ham and then the vegetables and ending with the spices. Deglaze everything with stock. Once the vegetables are cooked (crunchy but no longer raw), add the potato cubes and diced cheese to the pan. Mix everything together briefly; once the cheese has melted, serve on a plate. Note: This recipe is suitable for WW.
