The perfect potato cucumber salad recipe with a picture and simple step-by-step instructions.
- 1100 gr Potatoes mainly waxy
- 400 g Cucumber
- Salad dressing
- 150 ml Vegetable broth
- 1 Finely chopped onion
- 2 tbsp Chive rolls
- Here first the link to my salad dressing. Sabine`s salad dressing ……… I always have this salad dressing in the fridge …. goes well with all salads. Before everyone complains because I use Aromat and Maggi … everyone can do that as they want … it tastes so good to us …
- Wash and cook the potatoes, drain them off and let them cool down a little … then peel them and slice them on the grater. Peel and halve the cucumber and remove the seeds. Then cut into slices that are not too thick. Put the cucumber pieces in a bowl and scald with hot water, leave to stand for 1 minute, then drain – this prevents the cucumbers from drawing too much water and watering the potato salad. After the minute, drain and drain the cucumbers.
- Peel the potatoes and slice them on the grater. Put together with the drained cucumber in a bowl and pour the hot meat stock – only a part – and some salad dressing over it and mix … after a few minutes, when the liquids have been absorbed, the rest of the meat stock and possibly a little more Add the salad dressing. Depending on the type of potato and taste, this can be more or less. Add the chopped onion and mix in as well.
- When the salad has the desired consistency and taste, add the chives and mix in.
