Potato duet made from sweet potato and regular potato

Ingredients for 2 servings:

  • 2 m.-sized sweet potatoes
  • 2 medium-sized potatoes, waxy
  • 1 feta cheese
  • Olive oil for the mold
  • Rosemary, fresh or dried, amount to taste
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel both types of potatoes and cut them into small cubes, like sugar cubes. First add oil to the baking dish, then add the diced potatoes to the dish. Toss the diced potatoes with a spoon, spreading the oil evenly over the potatoes. Season the oiled diced potatoes with salt and pepper to taste, then sprinkle the rosemary over them. Place the baking dish on the middle rack in an oven preheated to 200°C (top/bottom heat) for about 20-25 minutes. Check the potatoes to make sure they are not half-raw. When the potatoes are no longer raw, spread the previously diced feta cheese on top and return the dish to the oven for another 6-7 minutes.
