Ingredients for 2 servings:

  • 4 schnitzels
  • salt and pepper
  • oil
  • 1 pack of puff pastry from the refrigerated section
  • 4 slices of cheese
  • 4 slices of ham
  • 1 egg(s), optional

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

à la Cordon Bleu

Since I like cordon bleu but hate the mess of breading, I used puff pastry instead. The result was very little work. The result is a cordon bleu that doesn’t leave any crumbs behind. Roll out the puff pastry on a baking sheet lined with baking paper. Place the ham slices lengthwise in the middle third. Season the schnitzels with salt (a little!) and pepper, and with other spices to taste, and fry them in a pan with a little oil. Place a fried schnitzel on each ham slice. Next, add a layer of cheese slices, which is placed on top of the schnitzels. If you like cheese, you can also add a second layer. Score the top and bottom of the puff pastry so that the top and bottom thirds can be folded over the schnitzels. Brush with water or a little egg. Bake in a preheated oven at 200°C (180°C fan-assisted oven) for 20 minutes. This serves two people – or four with additional side dishes.
