Ingredients for 4 servings:

  • 1 kg potatoes
  • 120 g flour
  • 2 eggs
  • some salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the potatoes and boil them in their skins. Peel them while still hot and press them through a ricer. Let the mixture cool completely. Sprinkle with flour and salt. Beat the eggs and mix in with a fork. Briefly press the dough together and immediately form into dumplings with floured hands until they are completely smooth. Add these to boiling water. Cover the pot until the water starts to boil again. Then let the dumplings simmer in the pot, partially uncovered, for about 25 minutes. Serve hot.
