Potato dumplings half and half

Ingredients for 4 servings:

  • 1 ½ kg potatoes
  • 170 g flour
  • 2 eggs
  • Salt

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Peel and wash the potatoes. Set half aside in a bowl, covered with water. Boil the rest in a pot of salted water, covered with water, for 20 minutes. Then drain the water. Steam the potatoes and let them cool. Grate the raw potatoes onto a kitchen towel and squeeze the excess water. Place them in a bowl and grate the cooked potatoes on top. Remove some of the flour for turning and place it on a plate. Mix the remaining flour into the potato mixture and stir in the eggs. Add salt if desired. Bring 2.5 liters of lightly salted water to a boil in a pot. Using floured hands, form the potato mixture into dumplings, each 5 cm in diameter, and coat them in the flour. Let them simmer in gently simmering water for about 20 minutes. Remove with a slotted spoon and drain. Serve immediately as a side dish.
