Ingredients for 4 servings:

  • 1,200 g potatoes
  • 100 g cornstarch
  • 100 g butter
  • 6 egg yolks
  • Salt
  • Nutmeg, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes, cook in salted water for 20 minutes, drain, and press through a potato ricer. Stir in the butter, cornstarch, and egg yolk, and season with salt and nutmeg. Form dumplings with wet hands, place them in boiling salted water, and cook over low heat until tender. The dumplings should float to the top.
