Potato dumplings made from raw potatoes, grandma's style

Ingredients for 4 servings:

  • 1.2 kg potato(s), floury, peeled, weighed
  • possibly potato starch
  • possibly milk
  • Salt
  • Nutmeg, freshly grated

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

simple basic recipe

Cook 400g of potatoes in salted water, drain, and press through a potato ricer. Grate 800g of potatoes into a bowl of water, then drain and squeeze thoroughly in a tea towel. Mix everything well and season with salt and nutmeg. If the mixture is too runny, add a little potato starch. If the mixture is too dry, add a little milk. Form the mixture into dumplings, place them in boiling salted water, and simmer over low heat for about 20 minutes until tender (the dumplings are cooked when they float to the top).
