Ingredients for 2 servings:

  • 4 large potatoes
  • 8 slices of bacon
  • 4 eggs
  • 100g Cheddar
  • 4 pinches of salt
  • n. B. Pfeffer
  • 4 stalks of chives

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Peel the potatoes and flatten the bottom slightly so they can stand securely on the baking tray. Hollow out the potatoes with a corer or spoon. Wrap two slices of bacon around the outside of each potato and place in the oven at 200°C fan/convection oven for about 20 minutes. After 20 minutes, remove the potatoes. Add the grated cheese to the hollowed-out potato, then crack an egg into each one (be careful not to break the yolks). Return the potatoes to the oven for about 10 minutes. Season with salt, pepper, and chives and enjoy. Serve with a green salad or a delicious piece of bread to dip into the egg yolks.
