Potato galettes with smoked salmon

Ingredients for 4 servings:

  • 4 small potatoes, mainly waxy
  • 1 egg(s)
  • 1 tbsp chervil, chopped
  • 2 tbsp chives, cut into rolls
  • Salt
  • pepper
  • 2 tbsp clarified butter
  • 100 g smoked salmon, sliced

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel and wash the potatoes, and dry thoroughly with kitchen paper. Whisk the egg in a bowl. Finely grate the potatoes and immediately mix with the egg. Stir in the chervil and 1 tablespoon of chives. Season with salt and pepper. Heat the clarified butter in a large pan. Using a tablespoon, place small biscuits from the potato mixture into the pan, spreading them evenly if necessary, and fry over medium heat for 3-4 minutes on each side until crispy. Arrange the galettes on warmed plates and top with the salmon slices. Garnish with the remaining chives.
