Potato-garlic paste

Ingredients for 4 servings:

  • 250 g potato(s), waxy
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt
  • 1 bunch of chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Deliciously light

Wash the potatoes, cover, and steam in a little water for 25 minutes. Drain the potatoes, rinse with cold water, and peel while still hot. Then press them through a potato ricer or a sieve into a bowl. Peel the garlic and press it through the garlic press. Stir in olive oil and lemon juice. Season the paste with salt to taste. Wash the chives, finely chop them, and stir them in. Serve the spread with fresh white bread. Variation: If you don’t like garlic, you can replace it with 2 tablespoons of finely chopped walnuts or almonds. Per serving: 1 g protein/4 g fat/9 g carbohydrates.
