Potato gingerbread

Ingredients for 1 servings:

  • 6 eggs
  • 750 g sugar
  • 500 g nuts
  • 4 tsp cinnamon
  • ½ pack of gingerbread spice
  • 1 tbsp cocoa powder
  • 3 packets of baking powder
  • 450 g flour
  • 100 g candied orange peel
  • 100 g candied lemon
  • 650 g potatoes
  • 1 pack of wafers
  • 250 g couverture, chocolate
  • some milk

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

delicious, not just at Christmas time

Boil the potatoes, then mash them and let them cool. Mix together all the remaining ingredients, except the chocolate coating. Add the mixture to the potatoes and mix well. Spread the mixture onto wafers, place them on baking sheets, and bake for 15 minutes at 200 degrees C. Melt the chocolate in a water bath and spread it over the gingerbread.
