Potato mat with savoy cabbage

Ingredients for 4 servings:

  • 8 m.-sized potatoes
  • 5 tbsp olive oil
  • salt and pepper
  • 1 head of savoy cabbage, approx. 750 g
  • 6 slice(s) ham (farmer’s ham)
  • 2 onions
  • 50 g butter

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Peel and finely grate the potatoes. Heat a little oil in a non-stick pan, add the potatoes. Season, and fry until a cohesive crust forms. Keep warm. For the savoy cabbage, select 20 good-quality leaves, remove any tough central ribs, and blanch the leaves. Drain and refresh in ice water. Cut the farmer’s ham into thin strips. Finely chop the onions. Chop the savoy cabbage leaves. Melt the butter, add the ham strips and the onions. Sauté, then add the savoy cabbage strips, season with salt and pepper, mix well, and cook for 8-10 minutes. Serve with the potato mat.
