Ingredients for 4 servings:

  • 500 g broccoli
  • 400 g mushrooms
  • 400 g jacket potatoes, cold
  • 4 eggs
  • 1 onion(s)
  • oil
  • butter
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the broccoli and divide it into florets, peel the stalks and cut into sticks. Cook both in salted water for 2-3 minutes until al dente, then refresh with ice water. Cut the peeled potatoes into slices, spread them in a pan with 4 tablespoons of oil, and brown the underside. Dice the onion, sprinkle over the potatoes, and cook everything until golden brown, stirring occasionally. Just before the end of the cooking time, add the cleaned mushrooms and broccoli and cook for a few minutes. Add 40g of butter and season with salt and pepper. In another pan, fry 4 fried eggs and season with salt and pepper. Divide the potato pan among 4 plates and place a fried egg on each plate. Tip: The potato pan tastes spicier if you add some finely chopped garlic and a pinch of cayenne pepper.
