Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 garlic clove(s)
  • 2 tbsp olive oil
  • 500 g minced beef
  • 800 g jacket potatoes from the previous day
  • 2 bell peppers, red
  • 1 chili pepper(s)
  • 1 can of pizza tomatoes
  • salt and pepper
  • Herbs of Provence, dried
  • 4 spring onions
  • 75 g cheese, grated

Boil the potatoes in their jacket potatoes a day in advance. Peel and dice the onion and garlic. Sauté in hot oil in a large, non-stick pan. Add the minced meat and fry until crumbly. In the meantime, peel the potatoes and cut into thin slices. Wash, deseed, trim, and finely slice the bell peppers and chili. Add everything to the pan and fry. Deglaze with the pizza tomatoes, bring to a boil, and simmer for about eight minutes. Season with salt, pepper, and dried herbs. Stir in the grated cheese. In the meantime, trim and wash the spring onions, slice them into thick rings, and stir in. Season the potato and minced meat pan again with salt and pepper to taste and serve. Serve with a mixed salad. 400 kcal per serving.
