Seitan Bratwurst

Ingredients for 4 servings:

  • 100g tofu
  • 200 g water
  • 40 g oil, neutral
  • ½ tsp marjoram
  • ¼ tsp nutmeg
  • ¼ tsp pepper
  • 2 tsp salt
  • ½ tsp onion granules
  • ½ tsp garlic granules
  • ½ tsp caraway powder
  • 1 pinch of cayenne pepper
  • ¼ tsp guar gum
  • ¼ tsp yeast extract
  • ¼ tsp allspice powder
  • 130 g seitan (Seitanfix)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

vegan alternative

Roughly chop the tofu, place it in a blender, and blend. Add the seitan mix and seasonings. Then pour over the water and oil and blend until smooth. Form the mixture into small sausages using baking paper and wrap them in aluminum foil. Steam the sausages in a pot with a sieve for 45 minutes. Then let them cool. Tips: If you want the sausages a bit firmer, you can use a little less water. Since I didn’t have any yeast extract, I used 1 teaspoon of vegetable broth.
