Potato pan with tzatziki

Ingredients for 3 servings:

  • 500 g potatoes, small
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 onion(s)
  • 1 spring onion(s)
  • 2 tbsp oil (safflower oil)
  • salt and pepper
  • 2 tbsp rosemary, chopped
  • 200g tzatziki
  • 20 g Parmesan

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the potatoes with the skin on and boil for about 15 minutes. Drain and peel the potatoes. Halve, stem, and core the bell peppers, then dice them. Peel the onion and slice into rings. Clean, wash, and slice the spring onions. Heat the oil. Fry the small potatoes in the oil over low heat. Add the diced bell peppers and onion rings, fry briefly, and season with salt. Add the spring onions to the pan with the rosemary and tzatziki and heat briefly. Season the potato pan with salt and pepper. Coarsely grate the Parmesan cheese and sprinkle over it just before serving.
