Potato pancake roll with fresh tomato salad and salmon

Ingredients for 4 servings:

  • 7 potatoes
  • 1 small zucchini
  • 3 carrots
  • 100 g ricotta
  • 3 tbsp oat flakes
  • some flour, maybe
  • 2 packs of smoked salmon, 200 g each
  • 3 eggs
  • 2 onions
  • 2 garlic cloves
  • 2 spring onions
  • 2 lemons
  • 1 cup of quark, 250 g
  • 1 bowl of herb cream cheese
  • 3 cloves garlic
  • 1 sprig of rosemary
  • Basil, fresh
  • 2 bowls of cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • salt and pepper
  • Paprika powder
  • n. B. cheese, grated

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

Peel the potatoes and carrots and gradually grate them in the food processor, along with the zucchini. Now squeeze the mixture well with a clean kitchen towel and place it in a bowl. Preheat the oven to 160°C (fan oven). Grate an onion and 2 garlic cloves into the bowl. Mix the mixture with the oatmeal, eggs, ricotta, chopped rosemary, and the juice of one lemon. Season to taste with salt, pepper, and paprika. If it’s too runny, add a little more flour. Spread the mixture evenly on a baking sheet lined with baking paper and bake for 30 minutes. After 30 minutes, remove from the oven and let cool. In the meantime, prepare the quark and salad. For the quark, mix the cream cheese with the cup of quark, the zest and juice of one lemon, and the grated garlic clove, and season to taste with salt and pepper. For the salad, halve or quarter the cherry tomatoes, as desired, and place them in a bowl. Add a small, finely chopped onion and 2 finely chopped spring onions. For the dressing, mix the olive oil with the vinegar and 1 teaspoon of honey and drizzle over the tomatoes. Season well with salt and freshly ground pepper. I personally like lemon a lot and add the juice and zest of one lemon. Chill the salad. Season again shortly before serving. Once the baking sheet has cooled completely, spread the quark over the potato mixture and roll it up using the baking paper. Sprinkle the roll with grated cheese and bake in the oven for another 15 minutes at 160°C. When the roll is done, remove it from the oven and slice it into portions. Serve on a plate with the tomato salad and salmon.
