Ingredients for 1 servings:

  • 250 g potatoes
  • margarine
  • 1 egg(s)
  • 2 tbsp milk
  • 80 g flour
  • salt and pepper
  • Parsley, finely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the potatoes, halve them, and boil them in salted water. Then press them through a ricer, place them in a bowl, and mix them with 30g of margarine, egg, milk, flour, salt, pepper, and parsley to form a dough. With wet hands, form the dough into round cookies; the cookies should be about 1cm thick. Fry the cookies in margarine until golden brown. These potato cakes can be eaten alone with a salad or as a side dish to meat or fish dishes; this will make enough for two servings. They also go well with dishes with cream sauce.
