Potato pancakes à la Chrissi

Ingredients for 4 servings:

  • 1 ¼ kg potatoes
  • 2 onions
  • 3 eggs
  • Salt
  • pepper
  • 1 cup sour cream
  • 2 tbsp, heaped flour
  • 80 g clarified butter
  • Parsley

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

classic

Peel and finely grate the potatoes and a large onion. Mix with finely chopped parsley, salt, pepper, sour cream, and flour until smooth. Then stir in the eggs. Heat a little clarified butter in a pan and add a ladleful of potato batter to each side, spread evenly, and fry until golden brown and crispy on both sides. Slice the remaining onion into rings and fry in fat. Serve with lettuce or tomato salad. 250 kcal per serving.
