Grandpa's fried potatoes

Ingredients for 4 servings:

  • 1 kg potatoes, cooked from the previous day
  • 3 onions
  • 1 garlic clove(s)
  • 2 tbsp lard (alternatively margarine)
  • 2 tbsp marjoram, dried
  • pepper, black

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

with marjoram

Slice the peeled potatoes. Finely chop the garlic clove and the onions into half-moons. Fry everything in a pan, preferably an old cast-iron pan, in the lard. Add the marjoram (the exact amount depends on your taste), and pepper to taste and preference. When the potatoes have a nice crust, they’re done. Note: Since I’m at odds with salt, I deliberately avoid using it and serve it at the table so everyone can determine their own level of saltiness. Serve with pickles, fresh sourdough bread (if possible), and cold beer.
