Potato pancakes with salmon

Ingredients for 4 servings:

  • 2 eggs
  • 1 tbsp sugar
  • 1 onion(s)
  • 1 kg potatoes
  • 100 ml milk
  • salt and pepper
  • dill
  • Herbs of your choice
  • 250 g salmon (smoked salmon)
  • 250 g quark
  • e.g. cranberries
  • some sugar

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Mix the quark with dill, cranberries, and sugar. Grate the potatoes and mix with salt, sugar, pepper, the remaining herbs (to taste), eggs, milk, and onions. Fry small pancakes. Top the pancakes with one or two slices of smoked salmon. Sprinkle with a dollop of quark. Serve with ice-cold white wine.
