Peel the potatoes, wash them and drain them well. Peel the onion.
Finely grate or grate the potatoes and onion. This works best with the food processor.
Salt the potato mixture a little, about 1/2 teaspoon, mix everything well. Do not drain the potato juice. The mass is bound with flour. Now add a little flour 1-2 tbsp and mix until the mixture is bound. If you like, you can also add a few grated boiled potatoes instead of flour to thicken.
Now heat the oil in a pan and add the dough spoon by spoon. Fry the potato pancakes on both sides until crispy brown.
Sprinkle the finished pancakes with sugar and enjoy with applesauce.
