Ingredients for 4 servings:

  • 1 kg jacket potatoes from the previous day
  • 1 can of corn
  • 2 eggs
  • 1 zucchini
  • 3 tbsp potato flour
  • e.g. salt and pepper
  • n. B. Nutmeg
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Recycling leftovers

Peel and mash the boiled potatoes (I used a potato and spaetzle press). Finely grate the zucchini. Combine all ingredients except the oil, then form them into round, flat patties and fry in hot oil for about 5-6 minutes per side until crispy. They taste delicious with a dollop of crème fraîche on top and a tasty salad. If you just want them as a side dish, they’ll serve more than 4 people.
