Quick semolina soup

Ingredients for 4 servings:

  • 20 g butter
  • 40 g semolina
  • 1 m.-large leek(s)
  • 1 m.-sized onion(s)
  • 1 liter vegetable broth
  • 2 eggs
  • Salt
  • Parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Dice the onion. Slice the leek into rings. Melt the butter in a sufficiently large saucepan and fry the semolina, leek, and onion while stirring. Deglaze with the vegetable stock and simmer for about 10 minutes. Season with salt. While the soup continues to simmer, add the eggs and break them up slightly with a fork. Add the parsley.
