Ingredients for 4 servings:
- 1 kg potato(s), waxy
- 5 gherkins
- 2 carrots
- 3 eggs, boiled
- 2 large onions
- 1 jar mayonnaise
- salt and pepper
- Instant broth to taste
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Potato salad with mayo
Cook the potatoes with the carrots. Dice the eggs, onions, and cucumbers. Pour the mayonnaise into a large bowl, stir in the onions and cucumbers, and season well with salt, pepper, and bouillon powder. Dice the potatoes and carrots and add them to the mayonnaise mixture, then fold in the diced eggs. Don’t overmix, or everything will become mushy. Season again before serving.
