Ingredients for 4 servings:
- 1 kg potato(s), suitable for salad
- 1 large onion(s)
- 200 g bacon, streaky, mildly smoked
- 3 tbsp oil
- ⅛ liter red wine vinegar
- 200 g North Sea crabs, peeled
- ½ lemon(s), the juice
- Cayenne pepper
- some brandy
- salt and pepper
- possibly broth
- possibly herbs, fresh
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
with crab, served lukewarm
Boil the potatoes in their skins, peel, and slice. Finely dice the onion and bacon and sauté in a little oil. Deglaze with red wine vinegar. Add the remaining oil and bring to a boil. Marinate the crab with a little lemon juice, cayenne pepper, and brandy. Mix with the potato slices and season to taste. Pour the hot (but not boiling!) bacon and onion marinade over the potatoes and mix well. If the salad is still too dry, add a little stock and serve warm. Sprinkle with fresh, chopped herbs, such as dill or parsley, if desired.
