Potato salad my mom's way

Ingredients for 2 servings:

  • 6 large potatoes
  • 1 egg yolk
  • some salt and pepper
  • 1 tsp mustard
  • 125 ml oil
  • 4 cucumber(s) (pickles)
  • some vinegar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes. Mix the egg with salt, pepper, and mustard. Slowly add the oil while stirring with a hand mixer to make a mayonnaise. Slice the cooked potatoes and place them in a bowl. Slice the cucumber and add them to the bowl. Add the mayonnaise and season with vinegar. This salad is best served with fish fingers or a schnitzel. Tip: If you’re worried about salmonella, you can heat the egg over a water bath (at about 70 degrees Celsius) until just before it sets.
