Potato salad my mom's way

Ingredients for 5 servings:

  • 1 kg potato(s), waxy
  • 2 large onions
  • 6 gherkins (Spreewald)
  • 2 large apples
  • 6 eggs
  • 200g salami
  • 150 g bacon
  • 1 jar mayonnaise (salad mayonnaise)
  • salt and pepper
  • Paprika powder
  • Cayenne pepper

Working time approx. 1 hour; Rest time approx. 8 hours; Total time approx. 9 hours

Not for calorie counters, but delicious!

Wash the potatoes and prepare them as jacket potatoes. Peel and finely dice the onions, dice the bacon, cut the salami into thin strips, peel and dice the apples, and quarter the gherkins lengthwise and slice them thinly. Boil the eggs hard. Fry the bacon, salami, and diced onions in a non-stick pan over low heat until the onions begin to brown. No additional fat is needed because of the bacon. Peel the cooked potatoes and cut them into thin slices. Add the apple pieces and the gherkin slices. Add the contents of the pan, peel the eggs, cut them into small cubes, and add them to the other ingredients. Once everything is in the bowl, add the salad mayonnaise and season generously with salt, pepper, paprika, and cayenne pepper. Let it sit in the refrigerator overnight. We usually eat this potato salad on Christmas Eve with the traditional Bockwurst, but it also tastes great with grilled food or just on its own.
