Potato salad with avocado

Ingredients for 4 servings:

  • 650 g potatoes, new, peeled
  • 1 large avocado(s), ripe
  • 2 tsp fresh herbs, chopped
  • ½ lemon(s), juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

creamy, fresh and vegan

Boil the potatoes, drain, slice, and place in a large bowl. Peel and mash the avocado, then mix it with the potatoes along with the lemon juice and herbs. Season with salt and pepper. I like to use dill and chives, but parsley and tarragon, or a mixture with fresh coriander, would also work.
