Ingredients for 2 servings:

  • 400 g potatoes
  • 1 apple
  • 100 g cucumber(s)
  • 1 small onion(s)
  • 4 tbsp vinegar
  • some sweetener
  • Parsley
  • salt and pepper
  • 1 tbsp oil
  • dill
  • chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil, peel, and slice the potatoes. Quarter the apple, remove the core, and slice thinly. Halve the cucumber, remove the seeds, and slice as well. Finely dice the onion. Mix the vinegar, sweetener, onion, a little salt, pepper, and oil to make a salad dressing. Let the potatoes, apple, and cucumber marinate well. Sprinkle with chopped herbs and serve.
