Potato salad with avocado

Ingredients for 2 servings:

  • 2 portions of potatoes, boiled
  • 2 avocados, ripe
  • 3 eggs, hard-boiled
  • Salt
  • pepper
  • Vinegar
  • oil
  • some lemon juice, for drizzling

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Peel the avocados, cut them into bite-sized pieces, and drizzle with a little lemon juice. Slice the hard-boiled eggs and slice the potatoes. Mix everything together and season with vinegar, oil, salt, and pepper.
