Potato salad with bacon

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 small cucumber(s)
  • ½ onion(s)
  • ½ red bell pepper(s)
  • 100 g bacon, streaky
  • 4 tbsp vinegar
  • 1 bunch of chives
  • ½ tsp pepper
  • ½ tsp salt
  • some meat broth

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes, let them cool, and slice them. Peel the cucumber and slice or grate it. Dice the bell pepper and onion. Dice the bacon and fry it in a pan with a little oil. Mix everything together and season with vinegar, meat broth, chopped chives, pepper, and salt.
