Potato salad with mushrooms

Ingredients for 8 servings:

  • 8 large jacket potatoes
  • 5 medium-sized eggs, boiled
  • 4 medium-sized gherkins, finely chopped
  • 1 can mushrooms, sliced
  • n. B. spring onion(s)
  • 150 ml mayonnaise
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and eggs and slice them. Finely chop the spring onions (amount to taste; I use about 4-5). Mix all ingredients together. Add the pickled cucumbers and a drained can of mushrooms. Season with salt and pepper, and toss with mayonnaise.
