Potato salad with goat cheese and grapes

Ingredients for 6 servings:

  • 1 kg potato(s), cooked, peeled
  • 2 m.-large onion(s), red
  • 300 g grapes, blue
  • 240 g goat’s cheese (goat’s cheese roll)
  • Basil, a few leaves
  • 4 tbsp vinegar (white wine vinegar)
  • 80 ml oil
  • Salt and pepper, from the mill

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

without mayonnaise

Peel the onions and slice into thin rings. Wash the grapes, pat dry, halve, and remove the seeds. Cut the potatoes into bite-sized pieces and toss them with the onions and grapes in a bowl. Crumble the goat cheese into small pieces, wash the basil, pat dry, and slice into thin strips, then add both to the bowl. Mix the vinegar with oil, salt, and pepper and gently toss with the prepared salad ingredients. Let the salad stand for a while and season again before serving.
