Biggi's egg salad

Ingredients for 4 servings:

  • 6 m.-sized eggs
  • 2 small zucchini
  • 2 cherry tomatoes
  • 4 rings pineapple
  • 100 ml cream
  • 100 ml milk
  • 200 ml tartar sauce
  • pineapple juice
  • Pepper, freshly ground
  • Sea salt
  • Parsley, fresh or dried

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Hard-boil the eggs, quarter them, and then halve them again. Dice the zucchini and cut the pineapple rings into small pieces. Combine everything in a bowl. Mix the cream, milk, remoulade, and pineapple juice together and season with salt and pepper. Add the dressing to the ingredients in the bowl and gently fold in. Garnish with quartered tomatoes and parsley and let it marinate. Enjoy the next day.
