Potato salad without mayonnaise

Ingredients for 2 servings:

  • 7 m.-sized potatoes, boiled, peeled, sliced
  • 8 small gherkins, cut into cubes
  • 3 medium-sized eggs, hard-boiled, peeled, diced
  • 1 cup crème fraîche
  • 2 tbsp cream
  • 80 g meat sausage, peeled, cut into cubes
  • 3 tsp vinegar
  • salt and pepper
  • 3 m.-sized onion(s), cut into fine cubes
  • 1 tsp rapeseed oil
  • 2 tsp olive oil
  • 4 tsp cucumber juice

Instructions

Working time approx. 35 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 35 minutes

Place the potato slices, cucumber cubes, eggs, sausage, and diced onion from one onion in a bowl. Fry the remaining onion cubes in olive oil until crispy. Add the vinegar, cucumber juice, rapeseed oil, cream, crème fraîche, and fried onions to the bowl and mix thoroughly. Season with salt and pepper, then let stand for 3 hours. Mix again and season to taste before serving.
