Potato-sesame spread

Ingredients for 1 servings:

  • 300 g boiled potatoes
  • 1 large onion(s), diced
  • 3 tbsp olive oil
  • 1 tsp, levelled cumin, ground
  • 1 tsp, sautéed coriander, ground
  • 2 tbsp lemon juice, freshly squeezed
  • 3 tbsp sesame paste
  • 2 tbsp sesame seeds
  • e.g. sea salt
  • 1 pinch(s) of cayenne pepper
  • 2 tbsp flat-leaf parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wholesome, vegan, also as a dip or warm mashed potatoes, ideal for using leftovers

Sauté the onions in 1 tablespoon of olive oil until translucent, then toss with coriander and cumin. Mash the jacket potatoes and add the seasoned onions. Add the remaining ingredients and mix well. Season to taste if desired. With cold potatoes, this makes a delicious spread or dip for patties such as lentil balls or falafel. It’s also ideal for using up leftover potatoes. With freshly cooked, still-warm jacket potatoes, it makes a delicious mashed potato with an oriental flavor.
