Ingredients for 4 servings:

  • 1 ¼ kg potatoes
  • 1 bunch of soup vegetables
  • 1 m.-sized onion(s)
  • 125 g bacon
  • 1 ½ liters of water
  • some oil for frying
  • 1 bunch of chives
  • 1 bunch of parsley
  • Vegetable broth (seasoning dose)
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

quick and easy

Chop the vegetables, potatoes, and onion into small pieces. Fry the onion and bacon in oil, then add the vegetables and fry briefly. Deglaze with water and add the potato pieces. Season with vegetable stock, salt, and pepper, and simmer for 20 minutes. In the meantime, chop the parsley and chives. When everything is cooked, remove the pot from the heat and puree everything with a hand blender. If you like, you can also puree it roughly so that a few pieces are still in. Now add the parsley and chives and puree briefly. Finally, season again with salt and pepper. Mettenden sausages and/or bread go well with the soup.
