Ingredients for 6 servings:

  • 3 stalk(s) leeks
  • 700 g carrot(s)
  • 200 g celeriac
  • 2 kg potatoes
  • 200 g bacon
  • 80 g butter
  • 3 liters of vegetable broth
  • 12 sausages, wieners
  • Parsley, marjoram, lovage
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the leek, halve lengthwise, wash, and cut into rings. Clean, peel, wash, and dice the carrots and celery. Peel and wash the potatoes, and dice them. Peel and dice the onions. Dice the bacon. Sauté the diced onions and bacon in the fat. Add the vegetables and sauté. Pour in the broth, add the potatoes, season with salt, and simmer for about 50 minutes. Then heat the sausages in the soup. Chop the herbs and add them. Season the soup with salt and pepper.
