- 5 large potatoes
- 3 large carrots
- 1 stalk(s) leek
- 4 sausages (Wiener, Käsekrainer), or similar
- 2 large onions
- 3 tsp, leveled vegetable broth, instant
- pepper

- 1 cup sour cream
- 2 tbsp marjoram
- 2 cloves garlic
- 2 tbsp oil

Delicious, healthy and filling potato soup that is quick to prepare and requires only a few ingredients
The ingredients are for 4 people, as it’s best to make a huge pot of soup and then have something healthy and delicious to eat for 2-3 days. Peel the potatoes and carrots and cut them into large cubes. Finely chop the onions and slice the leeks. Press or finely chop the garlic. Slice the wiener sausages. Heat the oil in a large pot and fry the onions until they are nicely browned. Then add the leeks. Stir well and let sizzle for about 2 minutes. Meanwhile, bring 1.5 liters of water to the boil in a kettle, pour in the stock, and then deglaze the onions and leeks. Then add the potatoes, carrots, and garlic. Stir well, put the lid on, and let simmer for about 5 minutes. Then comes the most important part: Pour half of the soup into another container and puree it finely. Then return it to the large pot, season with marjoram, salt, and pepper, add the sausages, stir, and simmer with the lid on for about 10 minutes, until the potato pieces are tender. Then season to taste, add the sour cream, and stir. If you have the following ingredients on hand, you can refine the soup with them: caraway powder, paprika powder, cumin, nutmeg, and chili flakes. You can also toast diced bread with the onions.
