Potato soup with green beans

Ingredients for 4 servings:

  • 400 g potatoes
  • 1 onion(s)
  • 30 g butter
  • 1 liter vegetable broth
  • 500 g beans, green (broad beans – fresh!)
  • 200 g whipped cream
  • salt and pepper
  • marjoram

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Very easy and inexpensive!

Peel and dice the potatoes. Peel and dice the onions, then fry them with the potatoes in butter or margarine. Add the stock and simmer covered for 15 minutes. Wash and trim the beans and cut them into small pieces. Once cooked, puree the potatoes with a hand blender or potato masher. Add the cream. Add the beans to the pot and simmer for another 15 minutes. Season with salt and pepper. Pick the marjoram and add it to the soup. Tip: If you like, you can add 150g of bacon (fried until crispy in a pan) to the soup. In our family, we use fresh sausages. We press out the sausage meat, form it into small balls, and let them simmer in the soup for the last 10 minutes! We also usually make double or triple the batch – the soup freezes perfectly!
