Potato soup with peppers

Ingredients for 4 servings:

  • 1 kg potatoes
  • 100 g bacon, streaky
  • 2 onions
  • 1 liter meat broth
  • Paprika powder
  • 1 bay leaf
  • 1 tsp oregano
  • salt and pepper
  • 4 bell peppers
  • 125 ml sweet cream
  • 500 g sausages, small, coarse
  • Parsley, fresh

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, wash, and dice the potatoes. Dice the bacon and onions and fry everything together. Brown the potato cubes in the bacon fat, season with paprika. Pour in the boiling meat broth, add the bay leaf, and oregano. Season the soup with salt and pepper, and simmer for 20 minutes. Meanwhile, thoroughly clean and wash the bell peppers and cut into strips. Cut the sausages into small pieces. Add the bell pepper strips and sausage pieces to the soup and simmer for another 10 minutes. Stir the sweet cream into the potato soup, heat the soup, and season again with salt, pepper, and paprika. Finally, sprinkle everything with freshly chopped parsley.
