Ingredients for 4 servings:

  • 750 g potatoes
  • 4 onions
  • 150 g bacon, streaky
  • 1 bunch of chives
  • 3 egg yolks, fresh
  • butter

Potato sparrows according to a recipe from Grandma

Peel, wash, and dice the potatoes, then boil in salted water. Drain and press through a potato ricer while hot. Finely dice the onions and bacon. Place both in a saucepan, fry the bacon, and let the onions become translucent. Then add to the potato mixture. Finely chop the chives and add them to the potato mixture along with the 3 egg yolks. Knead all ingredients into a smooth dough, form into a ball, and let rest in a cool place for 30 minutes. Form the dough into sausages about the thickness of a finger. Heat the butter in a pan and fry the sparrows in batches until golden brown on all sides.
