Ingredients for 2 servings:

  • 3 m.-sized potatoes
  • 3 eggs
  • 1 tsp mustard
  • 1 onion(s)
  • olive oil
  • salt and pepper
  • some water, lukewarm

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thinly slice the potatoes and add a finely chopped onion. Add the potato slices and onion to the pan, season with salt and pepper, and fry for about 10-15 minutes until half cooked. Whisk the eggs with the water, mustard, salt, and pepper in a bowl and fold in the warm potatoes. Let the mixture rest for about 10 minutes. Add a little oil to the pan and let the mixture set over low heat. Flip the tortilla using a plate and brown the other side as well. The tortillas can be eaten hot or cold.
