Ingredients for 2 servings:

  • 400 g potatoes
  • 2 onions
  • salt and pepper
  • 4 eggs
  • 3 garlic cloves
  • 4 tbsp cream, possibly reduced-fat
  • Parsley
  • chives
  • some oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the potatoes thinly and pat dry with paper towels. Slice the onions into rings. Heat the oil and sauté the onions until translucent. Add the potatoes. Reduce the heat to low and fry the potatoes in the pan for about 10 minutes, turning occasionally. Sprinkle with salt and pepper. Whisk the eggs, cream, parsley, and chives. Transfer the potatoes to a dish. Pour the eggs over the potatoes. Preheat the oven to 180°C. Bake for about 20 minutes.
