Ingredients for 1 servings:

  • 3 potatoes, raw
  • ½ onion(s)
  • 4 tbsp olive oil
  • salt and pepper
  • 4 eggs

Instructions

Egg with fried potatoes and onions

Peel the raw potatoes and dice them into small cubes. Do the same with the onion. Heat the olive oil. When it’s hot, add the diced potatoes to the pan. Season with salt and pepper, reduce the heat, and fry for 10 minutes, turning occasionally. When the potatoes are almost cooked, add the onions. Drain everything in a colander. Beat the eggs until frothy, season with salt, and mix with the potatoes and onions. Add more oil to the pan, add the potato, onion, and egg mixture, and fry for 2-3 minutes over medium heat, turning occasionally. Slide the mixture from the pan onto a plate and serve.
