Potatoes: Herb Curd Digger

The perfect potatoes: herb curd digger recipe with a picture and simple step-by-step instructions.

  • 8 piece Mostly waxy potatoes, medium-sized
  • 2 piece Cooked potatoes
  • 2 piece Free range eggs
  • 1 piece Onion
  • 500 g Herb quark
  • 500 g Black pepper from the mill
  • Rapeseed oil for frying
  • Salt
  1. Let the herb quark drain overnight in a sieve with kitchen paper in the refrigerator. It should be pretty dry.
  2. Peel the onion and dice it very, very finely. Peel and grate the potatoes coarsely.
  3. Mix the quark, eggs, pepper and chopped onion thoroughly and then mix in the grated potatoes.
  4. Heat the oil in a pan and add portions of the potato dough with a tablespoon, spread flat and fry until golden on both sides. Remove excess fat from the finished excavator on kitchen paper.
  5. Serve immediately, only now season with salt and enjoy with applesauce – I love apricot compote with it.
