Ingredients for 4 servings:

  • 10 potatoes, mainly waxy
  • 6 eggs
  • 2 cups of sour cream, approx. 400 g
  • some salt
  • some oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

A vegetarian layered side dish from the microwave with potatoes, eggs and sour cream

Cook the potatoes in salted water until tender. Boil the eggs until hard-boiled. Peel the potatoes and eggs and slice them. Mix the sour cream. Add a little oil to a tall, microwave-safe bowl. Place half of the potatoes in the bowl, covering the bottom. Spread half of the eggs on top. Add a layer of sour cream on top and season with salt. Cover with a layer of potatoes and eggs. Finish with a layer of sour cream. Add a little more salt, if desired. Cook in the microwave at around 500 watts for around 15 minutes. The sour cream can be a little brown.
